When a Mushroom-turned-Mushtree has been chopped, its stump will turn into a harvested Mushroom spawn point once the Full Moon ends.

I am unsure if its something I did, but when I cut down a tree during the full moon, the spawn point didn't return in the morning. Only a stump remained. Bit annoied that my green mushroom farm is unusable now.
