It seems that the Mushtrees return to being normal mushrooms after they are not in your immediate vicinity. When I was scanning for Mushtrees via the map, most suddenly disappeared once morning came. The only ones that were still Mushtrees were the ones around me. Once I left the location, those last few trees also disappeared from the map. I presume that’s how they turn, only the mushrooms not on the screen transform. So I’m guessing that there is no animation or process they go through, they just suddenly change when you aren’t looking. I'm going to keep an eye out during the next full moon.
