"Even the King is bound to the board," says Maxwell…He IS the king - virtually powerless, but still the most important piece in the game; take him down, and victory is yours.

The Grue is the Queen. Think about it - Charlie is a girl, as revealed by some spoiler or other, and she came to the world of Don't Starve with Maxwell; she's also super-powerful, cannot be fought against, and will kill you in two hits if you're not armored - the most powerful mob in the game.

As for pawns, I like the idea presented by Skylord Eiberich below: Clockwork enemies that resemble the player character. The point of the "chess" game between Maxwell and the player character is that the player character is supposed to be king, pawn, queen, rook, knight, and bishop all in one; having chess enemies that look like the player character would make perfect sense, as, like all chess pieces, pawns are identical on both sides save for color.
