She's saying the creature's "obvious name" in Latin. She isn't implying that the creature exists outside the Don't Starve world/dimension, but rather saying its name in Latin. Because Wickerbottom.

She calls alot of animals by their relative phylogeny too, but just because she assumes, for example, that the Deerclops is in the Laurasiatheria superorder doesn't mean that they are natural to her world. She just calls it as she sees it (the Deerclops looks like an ungulate).
