I believe the Peacock was meant to be the Gobbler equivalent of Shipwrecked DLC, but was then scrapped from development and replaced by Snakes spawning from Berry Bushes. It could be seen briefly in the corner of the screen during a Rhymes with Play preview stream when SW wasn't even in Early Access yet, but was never commented on.

I don't know why it was removed, maybe the fast runner-mechanic didn't work well on islands, or maybe it was just another re-skin like Poison Frogs.
