There are three types of Mushrooms; Red, Green, and Blue, which can be harvested to receive a Red Cap, Green Cap, and Blue Cap. They can be eaten raw or cooked as VegetableFood, or used in Crock Pot recipes as 0.5 units of veggie or as filler. They can also be given to a Pig to produce Manure. Each mushroom has different effects on Health, Hunger, and Sanity, which change drastically when cooked, therefore a player needs to know the advantages and disadvantages of their effects and think hard before consuming them. However, when combined effectively, mushrooms are a very synergistic food.

Red Mushrooms are typically found in Grasslands or Forests and can only be picked during the day. Red Caps have the worst effects of all the mushrooms, both raw and cooked.
Green Mushrooms are typically found in Forests and Marshes, and can only be picked at Dusk. Green Caps are the best to increase sanity as cooked and also decrease sanity as raw.
Blue Mushrooms are typically found in Grasslands and Marshes and can only be picked at Night. Blue Caps are best for healing and hunger as raw, at the cost of some sanity.
Picking mushrooms gives 1 Mushroom Cap. It will grow back after consuming 5 to 10 minutes of Rain in total. As it snows during Winter, Mushrooms won't be able to grow back during Winter.
They can also be dug up at any time using a Shovel, resulting in 2 Mushroom Caps. This will destroy the mushroom spawn only temporarily, as Mushrooms have been added to world regrowth. When dug up or destroyed, they will regrow as a whole as the same type with a base regrowth time of 20 days. Additionally, Red, Green and Blue mushrooms have 2x faster regrowth timer during Day, Dusk and Night respectively and at all the other times 1x normal speed, so in reality it won't take 20 days. They attempt to respawn within 5 tiles of their original location, on the same terrain, avoiding roads, structures and other things that could block it and there must be no players nearby.
The Mushroom Planter can be used to grow Mushrooms of all types by planting Caps or Mushroom Spores on them, except for Moon Shrooms which only a Wormwood with Moon Shroom Cloud skill can plant. Mushroom Planters can still grow mushrooms during Winter down in the Caves.
Unlike in Don't Starve, Mushrooms do not turn into Mushtrees during a Full Moon.
Tips
Red Mushrooms are good for giving to Pigs, luring Gobblers, and using as Crock Pot filler. Wormwood can eat raw Red Caps without any negative effects.
Raw Green Mushrooms are good for depleting sanity or for lowering enlightenment, which can help the player avoid Gestalt attacks that are due to high Lunacy.
Raw Blue Mushrooms are good for regenerating health and hunger, and cooked green caps make up for the lost sanity. So, raw Blue Mushrooms and cooked Green Mushrooms are a full diet for characters that can eat vegetables.
Haunting both wild or picked Mushrooms as a Ghost player or Wendy with the Team Spirit III skill asking Abigail, has a small chance to change the type of the mushroom forever, to the other 2 typical types. For example from Red to Green or Blue. This is best used on Mushroom Ring set pieces in case it happens.
Rings of Mushrooms can be found in some worlds as Set Pieces. These resemble Fairy Rings, which are naturally occurring rings of mushrooms that are thought to have supernatural origins in various mythologies.
Although they are considered vegetables in Don't Starve, mushrooms are body parts of fungi, and are technically not plants. However, they act more like vegetables than anything else during digestion.
Most characters mysteriously see green mushrooms as completely normal and mundane despite its strong effects on sanity, Warly mistakes them for what would be known as white button mushrooms in English despite being green with a wide brimmed cap.
As of Game Update 555166 - May 1st 2023, part of the From Beyond: Taking Root, Mushrooms have been added to world regrowth, making them renewable.
Bugs
If a mushroom is picked as it sinks into the ground, the player will receive a mushroom but the hole the mushroom left would look like the mushroom is still there and sleeping. The player will still view the mushroom as if it were picked already.
